The Riverwalk is a must, it's just a neat little area. Other than that and Fiesta Texas and Sea World, not much to do.
If you are willing to travel outside of SA a couple of hours to New Braunfels, there is Schlitterbahn, the country's largest waterpark. I should say three waterparks.
