Manicotti Formaggio with a nice Chianti is always my absolute fav.

EDIT: thats Ricotta, mozzarella, parmesan cheese and herbs, baked in pasta rolls with marinara sauce with a nice dark red wine to accentuate the marinara sauce.

Let's put also Ravioli (fresh pasta filled with cheese and spices)

Lasagna (layers of squared pasta alternate with layers of tomato sauce, small meatballs, mozzarella cheese, ricotta cheese and the more you have the more you put...)

The Baba savarin (this is supposed to be a cake from Russians but it's very popular in the Naples area)

Sfogliatella (hard to describe)

For Italian wines there is:-

Sangioveses or a Primitivo - Both very powerful, full bodies reds with enough acid on the palate to cut through the richest fare. (Incidentley Sangioveses grapes are use to produce Chianti)

Docetto and Syhra - A lighter red, served chilled.

Vermentino- A white, crisp wine, served chilled a very refreshing wine.

Prosecco - The Italians very own sparkling white, crisp and refreshing.

Brisholi or Melangangi - ( pardon my spelling - I am not Italian - but have many Italian friends )

Eggplant / Aubergine fritters, with basil & romano cheese.

Also love boccincini, great on pizza with spinach & pine nuts.

& home made Gnocchi, with homemade fresh tomato sauce.

I live outer subs, near the rural / market gardens, I have to make tomato the italian way every year if I want some sauce.

Sad the "mammas" are getting old - all culture will soon be forgotten.

This is exactly my favorite italian food. It's almost an orgasm for me to eat this and I'm not kidding. My mother may not be italian, but she does Manicotti Formaggio like no one else I know.
