Oh, hell yes. Tedious as all hell to prepare, but so well worth it!

My favorite for baked pasta is Manicotti con Spinaci e Funghi, which is manicotti shells stuffed with a mixture of spinach, ricotta cheese, and mushrooms...served with a tomato sauce infused with sweet basil and oregano. And any of the Sangioveses, of course.

Tortellini pasta w. a rose sauce (red&white sauces, mixed)

Gnocchi a la Gorgonzola
Potato dumplings w. a sauce of gorgonzola cheese and walnuts

I make an Eggplant Parmesan that is so good, that it was auctioned off at a church charity auction for $157. I built up the market value of it over the last year or so by bringing it to church pot luck suppers. Then I entered into the auction a coupon to be redeemed for a family sized dinner with eggplant parmesan, garlic bread, and a bottle of a Sangiovese. They bid it up like mad.

I would love to put up the recipe, but it takes about 5 pages to describe the process.

Perhaps I should blog it?

Eggplant is one of three dishes prepared Italian recipe style that I never did come to like (maybe even regardless of how it was prepared). The other two was liver and zuchini. To this day I simply refuse to eat those. Naughty, as delicious as it is for everyone else, I designate my serving to you.

Eggplant is the bomb. I love it fried, stewed with other vegetables, roasted, in parmagiana, etc. I'm also a big fan of baba ganoush.
