I just realized that perhaps you were focused on why it's not defamatory per se to call a gay person straight. If that's where the disconnect lies, let me see if I can address the issue:
If being "straight" doesn't carry a stigma, it's not harmful to one's reputation to be falsely called straight. No defamation "per se". It is still possible that in a specific community that matters to the person falsely labelled as straight it could cause reputational harm. Tougher case to prove, but possible.
