Tonight, I'm making little individual meat "pies". The filling will be ground beef, peppers, onions, summer squash, and these cute little mushrooms I never heard of before that look more like bean sprouts in a creamy mushroom sauce. The "crust" will be broiled or grilled (depending on if the weather holds) portobello mushrooms that I'm going to try to crust over with crushed, toasted mixed nuts. It's just an idea I had. Might work, might not.
So far so good. Kinda. I got distracted and didn't broil the mushrooms before coating them with walnuts. And the distraction was that someone ate all the mixed nuts, and that someone was probably me.
Buuuuut... I made the filling, omitting the cute little mushrooms, and exchanging summer squash for kale, by request. The little mushrooms will be used to substitute for noodles tomorrow, when I plan to make a meat sauce.
Please pardon the condition of my kitchen door drape, and the stuff on the floor. I have dogs. They break stuff. They knock things over. How much do you love my outrageous apron? Doesn't matter. I love it enough for all of us.
Mild, but good texture. Great in hot pot, ramen, stir fry, etc. I like them. And yes, do cut off the bottom bit, or it will just be a dense cluster/blob of mushrooms all stuck together. I don't cut so far up that they're all individual mushrooms, but small clusters of a few to several.
