I suppose the castle is the obvious first on the list (I've only actually been once and I was about 3). Definitely wander around the old town, check out the Grassmarket and the gardens. If it's bad weather maybe one of the many galleries or museums. If it's nice climb Arthur's Seat for a view. Shopping all over the new town, bars on Rose St. and George St., live music in the evenings.
Can I ask where you are staying? Depending on where you are there is a lot to do outside of the city centre.
You could take a day trip to Glasgow too, but it's not as tourist-y and the city centre is really a big shopping area. I'd recommend instead going up even to Loch Lomond if you're leaving Edinburgh. North Berwick or a trip across to Fife if you have a hire car, fish and chips by the water. It's been nice weather the last few days, I hope it stays like this for the rest of your trip (unlikely though that is).
I hope you have a nice time regardless.

Oh, come on, you can't go to Scotland and not have haggis, neeps and tatties.

It's pretty good deep-fried in batter with a whisky sauce too, and if you're heating up the fryer, you may as well have a Mars bar too. I got them onto the menu at work in London a few years ago. Our chef even started experimenting with different types of batter. In the interests of fairness in advertising, I should really say that there are other chocolate bars available which are also suitable for deep frying.:lick:

I had the Mars bar, Viking. It was pretty good.

I might even have braved the haggis if you were there to shame me into it. Usually I'll try anything once and they were actually handing out samples somewhere but I managed to walk by, convincing myself that I'd pass by on the way back out of wherever it was. Somehow it didn't happen.

I shall forever think of you as "Haggis Virgin".

My own enjoyment of the wee beastie is, I have noticed, directly proportionate to the volume of whisky that I have consumed. Sometimes, I have enjoyed it immensely.

So we're not getting a wee report of the holiday, eh? Pity :(

It's such a shame you didn't have haggis. Some MacSween's haggis with mashed tatties and a dollop of neaps is basically heaven to me.

And Davey; Glasgow is still a dive ;)
