I'm ready for some corned beef and cabbage!

Not Irish...but ready to cook some of that good stuff this weekend!
Bought a couple flats of corned beef. (one is never enough for leftovers)
Have the traditional cabbage, carrots, potatoes, onion, etc. That stuff is good.

Then on to the reuben sandwiches. Rye bread, sauerkraut, swiss cheese, thousand island dressing, check!
Probably my favorite all toasted up.

Now I'm sorting out recipes on the internet for reuben soup. Sounds good, but I have never made it before.
Anyone have any recipes they have tested and would recommend? Want to take some for work Monday
for myself and a friend. Any tips would be appreciated. Some call for rye bread or the same croutons.

I'm just getting Friday night drunk and thinking things out for a list if necessary.

  • 1large onion, cut into quarters
  • 1head cabbage, cored and cut into 10 wedges (about 1 1/2 pounds)
  • 4 -5carrots, cut into 1 inch pieces

DIRECTIONS
  1. Combine the water vinegar, sugar, pepper and onions, in a 6 qt crock pot and mix well.
  2. Place corned beef and contents of spice packet in the mixture.
  3. Scatter the potatoes and carrots over the top and along the sides.
  4. Cover and cook on high heat setting 4 hours.
  5. Remove the lid and scatter the cabbage wedges over the top.
  6. Cover and continue cooking on low 3-4 hours longer, or until beef is tender.
  7. To serve, carve the beef into slices against the grain and serve with the cabbage and potatoes, with some of the cooking liquid spooned on top of the beef to keep it moist.

Thanks BillM, but I can cook the corned beef just fine. Have done it many times.
I was looking for a tried and true soup recipe.
