I wager his SNL appearance is a bid to get attention for something else other than GOT, since that show's about to end. However, I'd think he'd be getting a lot of opportunities for action roles, etc., given that he's famous for Jon Snow. But maybe he actually isn't getting those kinds of ops, so he's trying to pivot over to comedy. I'm sure he at one time would've loved to be part of Marvel, DC, or Star Wars franchises. (And probably still does.)
