as a jersey / philly area guy I agree..it's the water AND the climate. humid normally. the dough rises better. IMHO the best pizza is from the Jersey shore. crisp dough and great cheese and sauce. stand on the boardwalk on a warm summer night and enjoy one of lifes true simple pleasures. same with cheesesteaks. they ALWAYS taste better when you eat them outside..as all the great cheesesteak places know..thats why they have all the sidewalk eating area. (I prefer Genos over Pats )

The water in the NY/NJ/CT tri-state area is not foul.

That being said, I do not think it is the water. I think it is the knowledge of how to make good pizza. How to let the dough rise and how to toss it and the use of good ingredients. Also how to cook it at the tight temperature for the right time.

Corporate pizza SUCKS.

The only good pizza ever made by a large company was at the Showboat and Borgata Buffets.
Very true. The tap water in Arizona is worse than Jersey.

Its the dough, there is no doubt about it. There is something in the water up here, maybe its the chlorine or the radioactive waste, but either way it makes a damn fine pizza slice.

Are you suggesting that New York uses water from the Hudson to make their dough? :biggrin1:

I use a filter for ALL water used for human consumption - even boiling pasta!

And you are right, mem, knowledge and experience are what make great pizzas.

One of the best (right up there with NY pizzerias) is in Little Rock, AR, a place called "Vino's." They also brew some fine beer.

In the end your tap water is only as good as your pipes. I only drink spring water from gallon jugs, and in 1/2 liter bottles. Many bottles waters are purified NYC tap water. That's why I only buy water that says spring on it. For cooking my tap water is fine.

Actually NYC tap water is among the best tasting and cleanest in the US. As far as pizza goes, my vote as well goes for that NY-Philly corridor, and you can get a hell of a good cheese steak 'round this way too. There's also the best road side hot dog joint right around West Chester, PA. Natural casing, great bread, free condiments, and good hot fries. We've got the best comfort food in this area.

The water for New York City comes from reservoirs way up in the rural Hudson Valley. The water comes from rain and snow run-off. The water runs through limestone aquifers to reach the reservoir which usually results in fairly hard but sweet water. New York water is excellent by any measure and I wouldn't hesitate to drink tap water in New York.

Guess what folks? If you've been to Chicago and grew up there like I did, you'd know that Chicago Pizza isn't just deep dish. It's also thin crust. It's real crust, not that crap they make in New York that you have to fold to eat.

I have MAJOR pizza withdrawal here in the SF Bay Area. Zachary's in Berkeley claims to be the "real" Chicago Pizza, but they can't even do it right. They come sort of close...

But New York "pizza?" Puleez, it's just no better than Domino's or Pizza Slut (Pizza Hut).

All I know about them is that they often toast them and are pretty much like the submarine and hoagie sanwiches found in NJ and PA.
