If you are using the HDMI cable then it should be fine, mine is at 1080p, though I never had to pick a TV setting for that. The only TV setting for the HDMI channel of my TV is that it is on Game mode (with all of the extra bits turned off). My PS3 just detected that it is able to display at a higher resolution, and bam it automatically picked 1080p. Even when I do the PS3 reset in order to use the RCA cables if I have to use a different TV (when you power it on, hold the power button for ~5 seconds until it beeps again, then it will use the RCA output), when I plug it back into my TV via HDMI and turn it back on, it auto detects the cable and the setting and asks me if I want to use that resolution. You can try the reset trick if you want, even if it is hooked up to HDMI and not RCA it will show on the TV.

This video may (or may not) be of help.

Go in to your PS3 settings and make sure the correct screen solution and FPS are selected, this can sometimes be the cause.
