Eggos

1. Throw ya chicken orb innards into the blender. Toss in a handful of spinach. Hit that spin button. Scramble in a pan as you usually do. Bam! Green Eggs minus ham. Get them greens in, get your Seuss on.

2. Dig through the fridge to locate still viable leftovers. My favs are pizza or chinese dumplings... seriously, anything not too juicy will do. Also more chicken orbs. In a pan blessed by fire add oil. Chop up the salvaged take away. Introduce to pan+fire. Skizzlate until desire level of skizzlation is achieved. Tip in ya orb contents, scramble as ya will.

ETA: everything is better wrapped in a quality tortilla.

10 Minute Easy AF Chicken Pesto Pizza:

1 thin Boboli pizza crust
Pesto for base
Shredded chicken breast meat
Shredded mozzarella cheese
Optional: feta cheese

Preheat oven. Spread pesto on crust. Arrange chicken and cover with ample mozzarella. Can add crumbled feta for extra greatness-bake until cheese is golden and crispy.

Using regular Boboli crust is allowed, but not encouraged.

No Stir Pressure Cooker Risotto
I learned this method from Martha Stewart. There's a vid on the YouTube somewhere.
The ingredients other than rice and water/stock are variable and up to you. I often make shrimp risotto, but it works for any recipe- mushroom, fish. chicken, veggie.

A few shallots or 1 onion chopped small
A few green onions
A small red bell pepper (more for colour than anything else)
1lb or 400g jumbo shrimp, frozen or fresh.
Two or three large garlic cloves depending on how much you like garlic.
1 Tsp grated lemon rind
Half a tsp red pepper flakes
In the pressure cooker (lid off) saute the veggies in butter or oil until the onions are translucent. Remove from the pan and keep to the side.

Add more butter/oil and fry the shrimps.
Add the chopped garlic midway through cooking. Please don't overcook the garlic. Hate that. Remove from the pan and keep to the side.

There will probably be a good brown caramelized coating in the bottom of the pot now. That's a good thing.

Add a bit more oil to the pan a pour in a cup of Arborio rice. Stir it around until the rice is coated with the oil and let it cook a minute until the rice is translucent. Then toss in a good glug of dry white wine. Let that absorb or steam away and then add in the veggies, lemon rind, red pepper flakes, the shrimp mix and 2 cups water or light vegetable stock.

Put the lid on the pressure cooker, and turn it up high until the lid seals, then to low for nine minutes. After nine minutes release the pressure and open the pot. If the mix is too wet you can cook it a bit more to steam off the moisture.

Add a pat of butter and a tablespoon of grated parmesan and stir until creamy. Garnish with a bit of parsley.

It's not as complex as it sounds, the whole process takes about 25 minutes. It's basically the same ingredients and steps as any risotto, but without the 20 or 30 minutes of standing at the stove doing nothing else but continuously stirring and adding more stock again and again.

Don't burn the garlic!

Quick freezer no-cook applesauce:

Core, peel, slice a bunch of apples
Add to a freezer proof baggie & freeze

when you want applesauce, remove baggie from freezer and dump contents into a bowl. Using a potato masher, mash apples into desired consistency. Freezing apples makes them mushy. Add cinnamon or any sweeteners if you like. Enjoy!


(I make plain unsweetened applesauce often - especially if I have older apples that no one is eating, so they don’t go to waste).

Spicy makes everything better

Peaches, mango, watermelon, pineapple

Chili powder or Gochugaru depending on the flavor profile ya looking for. Sugar. Lemon or lime zest. Salt. Cilantro if ya like it. Sage or rosemary are good too. Toss in a spice grinder and whirl.

Drizzle fruit of choice with lemon or lime juice. Sprinkle with spice mix.

Cuz chai rules my beverage rotation. Left over chai goes into my pancake mix.

Ohmyglob! So yummy.

Also makes a tasty crepe with a few batter alterations. Mostly to thin it out.
