I was in the mood for salad tonight. I always make the dressing each time from scratch as the first step - chopped garlic (lots of it!), balsalmic vinegar, and extra virgin olive oil. Next, I added Romaine, carrot ribbons (made with a peeler), cucumber slices, avocado chunks, and tomato. Toss lightly. Add grated Romano cheese. Toss and serve. Pass the pepper grinder over it a few times. To die for. It's so simple. The garlic and the Romano are the secrets to transforming every day salad with oil and vinegar to a world class salad.
