The last 3 Star Wars films were visually stunning, but the story and plot lines fell flat.

The Assassination of Jesse James by the Coward Robert Ford (man that's a mouthful) - fantastic film and visually stunning to boot. Brokeback Mountain and Donnie Darko also come to mind.

Donnie Darko is a GREAT film. That's another storyline that you have to ponder after you watch it. The bad thing is that most of the gems of film-making go under the radar of most of the general public.

OOOps....I forgot to mention: The Cell
That movie was as visually disturbing as it was stunning.

Tequila Sunrise wasn't a great movie; but the three main charcters had the bluest eyes I have ever seen in a film. In each scene they were in it was as if blue topaz had been placed where their eyes belonged.

The beginning of Wall-E was an amazing depiction of earth destoryed.

The Rules of Attraction had FANTASTIC cinematography.

Let's not forget how visually visceral films like "Saving Private Ryan" and Schindler's List" were. The first 15 minutes of "Saving Private Ryan" were shattering.
"The Pianist" was also a film that left you totally drained emotionally.
My idea of a visually stunning film is one where you can turn the audio off completely, and still be moved by what your eyes are taking in.

Also, Kenneth Brannaugh's Hamlet adaption.

Yes.

Ben-Hur.

Saving Private Ryan, since I don't think anyone mentioned it.

EDIT: ^Fuck, that's what I get for not reading the bottom of the last page...both those films are incredible. Schindler's List is one of the most powerful movies I've ever seen, bar none.
