The BEST Fish and Chips

Here is my Fish & Chips recipe

3 pounds fresh cod fillets (thick ones)
Sea Salt
Pepper
1 cup +3 TBL flour
1 TBL baking powder
1 tsp freshly grated lemon zest
1/4 tsp cayenne pepper
2 large eggs
Vegetable oil

Lay the fish on a cutting board and sprinkle both sides with salt and pepper. Cut into 1 1/2 X 3 inch pieces
In a bowl combine the flour, baking powder, lemon zest, cayenne pepper. 1 1/2 tsp salt and 1 tsp pepper, whisk in 1 cup of water and the eggs.

Pour 1/2 " of oil in a large frying pan and heat to 360 degrees; dip each piece of fish in the batter and let the excess drip off. Place the coated fish carefully in the hot oil. Adjust the heat to be between 360 and 400 degrees. Cook on each side for 2-3 minutes until golden brown. Remove to plate lined with paper towel sprinkle with salt and serve hot with chips...

Chips

4 large baking potatoes unpeeled
4 TBL premium olive oil
1 1/2 tsp sea salt
1 tsp ground pepper
1 tsp minced fresh garlic
1 tsp minced fresh rosemary

Preheat oven to 400 degrees
Scrub the potatoes and cut lengthwise and then cut each half in thirds lengthwise; you will have six long wedges from each potato. Put the potatoes in a baking or cookie sheet with all of the ingredients and toss everything together making sure the potatoes are covered in oil and spread in an a single layer with the cut side down
Bake for 30-35 minutes and after 20 minutes turn over to the other cut side. Bake until litely brown and crisp. Sprinkle with salt and serve immediately.

What is it with Fosters being known as The Australian Beer? I've never known an Aussie who drinks the crap.

And so I'm on topic . . .
I live on the coast, so it doesn't matter where you get your fish and chips from, the fish is always super fresh. Most places around here will do it battered, crumbed or grilled. Batters are usually light - either tempura or beer batter. I only know of one place locally that makes BAD fish, but their chips (and their burgers) are to die for.

I has a once-in-a-lifetime experience ordering abalone and chips at the Santa Catalina Island, California (26 miles across the sea) wharf, and eating it while walking on the beach. I've always liked Icelandic haddock, pollock, and cod. unfortunately most places don't know how to properly cook it.
