The Kahuku Corn Stand on the north shore has the best corn on Oahu in my opinion. (They also have the best coconuts, tomatoes and watermelon too)... This is the best way to buy produce in Hawaii.
But you can make this with any corn I suppose.

nudeyorker corn mashed potatoes
3 pounds potatoes peeled and cubed
1.5 tsp salt
1 stick unsalted butter
1 large onion (maui onion is best if you can get a hold of one)
1/2 tsp cumin
5 garlic cloves peeled and mined
2.5 cups fresh corn kernels
3/4 cup milk
salt and pepper (I put a dash of cayenne pepper in too)
Boil the potatoes in the salt water until tender, meanwhile in a skillet melt the butter and saute the onion, cumin and garlic until the onion is translucent. Add the corn and cook for a couple more minutes. Add the milk and simmer for a few more minutes and then salt and pepper to taste.
Mash the potatoes and mix throughly with the corn mixture. I serve with a little butter and finely chopped cilantro

:eek: I only use more garlic in my ratatouille provencale - sounds great. If you didn't mash, would that leave it like a chowder?

No not with liquid ingredients in this amount; if you wanted to make corn-potato chowder you would have to increase the milk, butter and maybe add some stock. (It actually sounds good I think I'll try it)

It does - I think I will too. Also perhaps as the base for a chicken or scallop version. I missed lunch. I'm hungry and this isn't helping.

Mashed potato, coconut, cream, butter, milk and spring onion. In the right amounts. Ya can't kill potatoes, cause they already was buried.....hahahahaha....mmmm ok. Night :)

Hoss is absolutely right about the potato varieties. In Peru and Ecuador they have hundreds of kinds.

Here in USA I find almond-potatoes, blue potatoes, redskinned, 'white', russet ordinary, Yukon gold, and also it is wonderful to get fresh new potatoes in season. When you scrub them the peelings come right off, they are so tender.

Buy organic potatoes if you want to eat the skins. Some of the fungicides used commercially don't wash off.

I'm just thrilled to be able to get some goodies without flying 10 hours. You think these prices pinch? You should come food shopping in Honolulu! (I stopped bitching about in the 80's)

If you can find an on-line shop that sells leatherwood honey you'll be in for a huge treat.

The Tasmanian Honey Company

It's extremely potent in flavor and perfume so a tiny bit goes a long way.

I use it in my Leatherwood honey and macadamia nut semifreddo.

Got a recipe by chance?

Au Gratin Potatoes with Smoked Sausage.


3 pounds of potatoes (sliced thin)
1 pound of kielbassa (sliced thin)
2 cups shredded parmesan
1 tsp. salt
milk to cover potatoes
1 TBSP. each chopped parsley, oregano, rosemary.
(if using dried 1 tsp. each)
1 bay leaf
1 TBSP. butter
1 minced shallott
1 minced clove garlic
1 cup cream
salt & pepper to taste

Pre heat oven to 375 F degrees

place potatoes herbs salt butter and milk in pan cook till almost tender about 15 min. Drain and remove bay leaf.

mix cheese, shallott, garlic, cream, salt, and pepper.

grease a 9x13 baking dish

layer 1/2 of potatoes, 1/2 sausage, and 1/2 cream mixture repeat

bake 50-60 min till nicely browned on top.

I'll try it with the sausage. I make more or less the same thing but I put browned pork chops on the bottom layer. (That's a meal that makes my jewish heart skip a beat)
