I like to cook and am moderately good at it. In the last couple of years I have been developing my skill and working with new recipes. Some of my favorites are:

Tuna steak seared with a lemon, garlic, butter, and capers sauce

Shrimp sauteed in onion, orange zest, garlic, soreno pepper and flambe'd with tequila.

Chicken picata

Chicken marsala

Shrimp scampi ( sauteed in garlic, lemon, wine, and butter. Add a bit of melted butter mixed with flour to thicken it up at the end). I'm getting this one nailed down.

Salmon, I season both sides with McCormick "Season All" (no MSG) drizzle olive oil and add a little butter. Bake for 20 minutes at 400 degrees. About half way through I add string beans. (lower carb diet)

My spin on the Egg in the basket. (Hollowed out Texas Toast, fried scrambled egg in the middle.)

My Grandmama's peach cobbler

shrimp gumbo and of course etouffee

ox tail soup

country fried steak with cabbage , field peas , hot water corn bread , yams and a side of sweet potato pie and a little chow chow

or some fresh whiting or flounder with some red rice and greens that have been cooked with a neck bone in them and some okra. and of course hot sauce

a big ass plate of hoppin john' on new years day.

crab , crab legs , oyster , shrimp , crawdads , pretty much anything from the ocean

roasted duck or duck confit or the annual " sit around a huge fire for hours while you get piss drunk and roast a pig ".

jambalaya. kinda like gumbo but doesnt have red rice
