Chewy Jumbo Peanut Butter Cookies

2 cups sugar
2 cups firmly packed brown sugar
1 cup butter or margarine, softened
1 16-ounce jar Chunky Peanut Butter
4 eggs
1/4 cup milk
2 teaspoons vanilla
3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
2 cups rolled oats
2 cups flaked coconut

Heat oven to 350° F. In a very large bowl, beat sugar, brown sugar, butter, and peanut butter in large mixer bowl until creamy. Add eggs; beat until well mixed. Add milk and vanilla; mix well.

Combine flour, baking powder, and baking soda; add to peanut butter mixture. Stir until well mixed. Add rolled oats and coconut; mix well.

Drop 1/4 cup dough onto cookie sheets. Bake 15 to 18 minutes or until lightly browned. Let stand one minute; remove from cookie sheet. Cool on wire racks.

Makes three dozen jumbo cookies.

With that in mind, I present:

No-Bake Raspberry-Lemon Cheesecake Bars

2 pkg. (6 oz. each) fresh raspberries, divided (about 2-1/2 cups)
6 whole graham crackers, crushed
2 tbsp. butter or margarine, melted
2 pkg. (8 oz.) fat-free Cream Cheese, softened
1 jar (7 oz.) marshmallow creme
1 tbsp. lemon juice
 • Remove twenty of the raspberries for garnish; refrigerate until ready to use.
 • Mix crumbs and butter until well blended; press firmly onto bottom of 9-inch square pan. Refrigerate until ready to use.
 • Beat cream cheese, marshmallow creme and lemon juice with an electric mixer on medium until light and fluffy.
 • Stir in remaining raspberries; spoon over crust.
 • Refrigerate at least 4 hours.
 • Cut into 20 slices to serve.
 • Top each square with one of the reserved raspberries just before serving.

Sounds gorgeous, but now I need to find what "Graham crackers" and "marshmallow creme" equate to in England...

Oh, you wacky brits!

Graham crackers = you guys have the appetizing name of "digestive biscuits" for these. I've been told that graham crackers are a little sweeter than digestive biscuits, but not as sweet as tea biscuits.

Marshmallow creme = Fluff (and I've heard it's hard to find there, even under that name.)

Not owning a commercial mixer and lacking the patience to form huge cookies I cut the recpe in half, using 1/2 cup butter and 1/2 cup shortening; dispensing with milk altogether. The KitchenAid handled this nicely.

Form little balls about 3/4 inch in diameter and then flaten with the tines of a fork. Bake 8 to 12 minutes. Makes about 3 dozen regular cookies.

Ah... of course - McVities Digestives! Wonderful things.
By tea biscuits I think you mean what we call "rich tea" - "A drinks's too wet without one" as the slogan goes.

I remember getting Fluff years ago from one of our bigger grocery chains. My daughter and I used to sit like a pair of pigs in front of the telly with the jar and two spoons. I've not seen it since though. I think the list of E numbers would terrify me these days, what with my body having become a temple and all...
