Most of my favourites are green.
Broccoli, Peas (frozen, sugar-snap or mange tout), Spinach, Savoy Cabbage, spring greens (which are turnip tops, I think, though I don't like turnips themselves), mountain greens (in Greece, a wild spinach), Asparagus (apparently everyone's pee smells funny after eating it, but some of us can't smell the methyl mercaptan responsible for that because of our genetics - I can), brussels sprouts (thanks for the recipes, folks!) even my bell peppers - I prefer green to red or yellow - especially when fried with onions and mushrooms for a quiche or omlette. Oh, and Artichoke - fiddly to eat, nibbling the base of the leaves before you get to the heart, but worth it.
I only found out I like roasted parsnips last winter. I've just heard of winter vegetables (parsnips, carrots, red onions, potatoes) roasted with gorgonzola cheese! Suppose I'll have to wait to sample that. And then there's roasted yam...
