Most of my favourites are green.

Broccoli, Peas (frozen, sugar-snap or mange tout), Spinach, Savoy Cabbage, spring greens (which are turnip tops, I think, though I don't like turnips themselves), mountain greens (in Greece, a wild spinach), Asparagus (apparently everyone's pee smells funny after eating it, but some of us can't smell the methyl mercaptan responsible for that because of our genetics - I can), brussels sprouts (thanks for the recipes, folks!) even my bell peppers - I prefer green to red or yellow - especially when fried with onions and mushrooms for a quiche or omlette. Oh, and Artichoke - fiddly to eat, nibbling the base of the leaves before you get to the heart, but worth it.

I only found out I like roasted parsnips last winter. I've just heard of winter vegetables (parsnips, carrots, red onions, potatoes) roasted with gorgonzola cheese! Suppose I'll have to wait to sample that. And then there's roasted yam...

is it stupid that i luv red bell peppers

but i HATE green bell peppers on or in anything?

Green bell peppers are unripe red bell peppers. They (green ones) give me indigestion so I avoid them.

I like almost all vegetables. Being vegetarian, I have to!

Parsnips are wonderful. Try them with apples and nutmeg baked with some butter and brown sugar with a dash of apple cider vinegar.

I agree - green peppers don't agree with me either. They make my stomach churn with excess acid and make me upchuck. And asparagus...it makes your pee smell pungent - not a favorite of mine - I only like it grilled.

Vegetables I like:

Artichokes
Endive
Arugula
Chinese Broccoli (Gailan)
Beets
Turnip Greens
Burdock
Broccoli Raab
Daikon
Mung Beans
Snow Pea Sprouts
Sweet Corn on the Cob with lots of butter
Fried Okra
Grilled Eggplant
Collard Greens
Mashed Sweet Potatoes
Yams
Avocados
Cherry Tomatoes
Red Swiss Chard
Brussel Sprouts
Edamame
Yucca
Snap Peas
Celery
String Beans
Red Cabbage Slaw
Hijiki
Jicama
Baby Bok Choi
Cauliflower
Zucchini flowers fried
Frise
Butternut Squash roasted with butter and brown sugar
Kabocha

I grocery shop at a wonderful place called the Berkeley Bowl.

Lettuce, tomatoes, cherry tomatoes, cucumber and green collards.

Not sure if these count: green beans and potatoes.

Basically, if I could eat Indian curries I do believe I could be a vegetarian but they have to be seasoned correctly.
