Now that the weather is cooling off, I like to do more cooking and entertaining guests. Here is a fairly simple pot roast recipe I tried last night that was fantastic.

If anyone has a personal favorite recipe, please post..When I cook for women it usually goes over quite well..and I'd like to expand the repertoire this year.

Oven Kalua Pork
3 pounds pork roast
2 cups water
1 tsp liquid smoke
1/4 cup Hawaiian salt

Place pork fat side up in roasting pan, combine water and liquid smoke, pour over meat and sprinkle with salt. Cover and bake in 400 degree oven for three hours or until tender
Remove from pan shred pork and serve over rice.

Caramel sweet potatoes
8 sweet potatoes cooked and peeled
1 cup butter
2 cups brown sugar 1/2 cup water
1/2 cup shredded coconut
cut potatoes in one inch slices
Combine butter and brown sugar in sauce pan over med heat and heat until mixture thickens (10 minutes)
Add sweet potatoes, lower heat and simmer for 20 minutes
Sprinkle with coconut before serving

Garnish plate with fresh papaya and pineapple and sweet onions
Haupia Pudding
2 cups coconut milk+ 1 cup water
1/2 cup sugar
1/2 cup cornstarch
1/2 tsp vanilla
pinch slat
In a sauce pan over med heat combine coconut milk water and sugar gradually add corn starch vanilla and salt , until it thickens and pour into oiled 9 inch square pan and chill at least an hour, cut into squares and serve.

I’m having another cold weather classic tonight = Scalloped Potatoes w/Ham & Corn Bread but my favorite =


Chicken & Dumplings (real dumplings, not those nasty mushy ones)

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon poultry seasoning
  • 1/4 cup shortening
  • 1 egg, beaten
  • 1/4 cup milk
  • 3 cups chicken broth
  • 1 cup cubed cooked chicken
  • In a bowl, combine flour, salt and poultry seasoning; cut in shortening until crumbly. Combine egg and milk; stir into flour mixture just until combined. On a heavily floured surface, roll dough to 1/4-in. thickness. Cut into 1-in. strips; cut strips into 2-in. lengths.
  • In a large saucepan, bring broth to a boil. Add chicken. Reduce heat; drop dumplings onto simmering broth. Cover and simmer for 15-20 minutes or until a toothpick inserted in a dumpling comes out clean (do not lift the cover while simmering).

Tortilla Soup
Poach a chicken and shred it about 3 cups
3 tlb olive oil
1 cup diced onion
1/4 cup diced red bell pepper
1/4 cup diced celry
1/4 cup peeled diced carrot
1/2 tbl diced garlic
2 tsp cumin
2 tsp coriander
1 tsp paprika
1 tsp chile powder
1 tsp oregano
1/2 tsp cayenne
1 cup crushed tomatoes
2 quarts chicken broth (homemade is better, but Swansons will do in a pinch)
10 corn tortillas shredded into 1/2" pieces
1/2 cup shredded cheddar cheese
1 cup heavy cream
salt and pepper to taste
Throw everything into a slow cooker and cook for 6 hours

Garnish with crispy tortilla strips and more shredded cheddar cheese and cilantro

Popovers
3 1/2 cups milk room temp
4 cups flour
1 tsp baking powder
6 large eggs room temp
Heat oven to 450
Mix the dry ingredients into a bowl
If you have a Kitchen Aid or electric mixer take eggs and liquid ingredients and mix on on med speed for three minutes add dry ingredients and mix on med speed for two minutes until well blended. Let the batter rest at room temp for an hour. Fill non stick pop over pans level and bake for 15 minutes, turn oven temp down to 375 and bake for another 30 minutes or until golden brown.
Serve with strawberry butter
1 1/2 cups butter at room temp + 1 cup good quality strawberry preserves, put in a bowl and mix until fluffy

Thich pork cultets slow cooked in apple cider and calvados.
all served with creamy mashed potato with finely shaved onion and garlic.
Smoked cod chowder.
Sunshine soup. (pumpkin, sweet potato, potato and carrot soup laced with a little curry powder and double cream)

Afters-
Bread and Butter pudding with either rasins and cinnamon, apricot jam or raspberry jam centers, always with vanilla bean icecream.
Icky Sticky date pudding with hard sauce and custard.
