Recipe please!

Just bought some pork ribs and need a recipe to make spare ribs (you know like you get from a Chinese take away), looked in all my cookery books (including Mrs Beetons!) and cannot find one.

My cheap and lazy szechuan ribs/wings:

4 tbsp soy sauce
4 tsp brown sugar
2 crushed garlic cloves
1/2 tsp hot pepper sauce (or to taste)
2 lbs uncooked ribs

Separate ribs and boil in a large stockpot for 30-35 minutes.
Drain water and fat away and place ribs in a large bowl with a tight fitting cover.
Mix sauce, sugar, garlic, hot pepper in a small bowl. Pour over ribs, cover bowl and shake to coat.
Arrange ribs on a broiler pan and bake for 15-20 minutes at 375 F.

(The ones that call for hoisin sauce will likely be closer to what you get at a chinese restaurant...)

With so much good advice on recipes already, I can’t do any better. What I would say though, is if you buy propriety sauces check the salt content before you start marinating or combining. Often theses things have a high salt content that for a Western pallet could ruin a meal and not to mention affect your health! If you make up your own sauce, you’ll be more in control – and don’t forget a touch of star anis.

Thanks guys (interesting that only men replied - although it was my dad that taught me to cook), I appreciate your help - I will let you know how they turn out. I always make my own sauces and marinades, I enjoy the experience but just couldn't think how to do this dish!! (Blonde moment I expect!) I don't use packet mixes for anything (did you know you can get ones for batter and crumble!!!!!!!!!), its much nicer and easier (I feel) to make your own and at least you know whats in it!

NJQT466's Perfect BABY BACK RIBS

  • 3 lbs. baby back pork ribs, cut into individual ribs
  • 1/4 cup orange juice
  • 1/4 cup lite soy sauce
  • 1/4 cup packed dark brown sugar
  • 1 rounded teaspoon ground cumin
  • ½ tsp. crushed red pepper
  • 2 cups Hunt’s Honey Hickory BBQ Sauce
  • 1 small yellow onion cut into quarters
  • 2 stalks celery cut into 3 inch segments
  • 1 tsp. salt
Put oven rack in middle position and preheat oven to 375°F.
Place onion, celery, & salt in large pot of water with baby back ribs.
Parboil thawed ribs for 45 minutes.
Place ribs in a large baking pan.
Stir together orange juice, soy sauce, crushed red pepper flakes, brown sugar, ½ of the BBQ Sauce, and cumin in a bowl until sugar is dissolved, then pour marinade over ribs in pan.
Cover with foil and marinate for 1 hour.
Pour remaining sauce over ribs.
Roast ribs uncovered 30 minutes, then turn over ribs and continue roasting until they are well browned (about 30 minutes more) and marinade is thick and syrupy

Makes 4 to 6 hors d'oeuvre servings
Serve with cole slaw and beverage of choice.

I baste mine in sweet pickle juice while I smoke them on the grill over pecan wood. Then before you serve them brush on the sweet sauce of your choice. Cant go wrong. Go to foodnetwork website. Bon Apetit!!!!!!!!!!!!

True! And yet traditionally the kitchen has always been the habitat of women!

Anyone want to ask about other recipes - sometimes family recipes are better than the ones in the books (or online)?
