You're probably right, it looks like a relatively easy stunt to do but it could also be his stunt guy. No way is it a mannequin though because those life-like ones cost a fortune and is very labor intensive to make for just a 3 second clip. I think it's a real guy and the head was probably digitally edited out, like he had to wear a green mask or something.
It's not him. He said he was willing to do it, but the producers felt the stunt was too dangerous.

Yeah. That season finale broke my heart quite a bit, actually.
