I was only in Siem Reap for a couple of days and I'll have to look for my travel diary of that trip but what springs to mind immediately is how hot and wet that entire trip was (I was actually delighted to be able to have my laundry done there to have something fresh to wear again)
It's was charming; we got there by boat from Phnom Penh and stayed at Hotel De La Paix. (We had dinner there) We had a wonderful meal at a lovely place called Alliance Art Cafe. I was so surprised to find excellent pizza and pasta someplace else. I took a cooking class on the last day we spent there. Also found a very sophisticated gay bar and can't remember the name of it but my favorite place was a bar called Miss Wong's The entire trip was a wonderful adventure. Make sure you take comfortable light clothing because it's going to be HOT ( a couple of times during that trip I actually felt like I was cooking from the inside) And don't forget sunscreen I got one of the best sun tans of my life from the trip on the boat. When I was there in 2007, Siem Reap was mainly a town to support the tourist industry in the Angkor Wat complex (sic). There are many temples in that place, how many days you intend to spend wandering around there depends on how much you like your temples.

You could conceivably travel around IndoChina if you are so inclined since you would be there for a few weeks. Or you could spend a few days in Phnom Penh - the atmosphere there is quite different from Siem Reap. How about taking in Vietnam and Laos? But do check out your visa requirements for these countries.
