Hmmm. For me, it's gonna be something tomato based. Because LOVE TOMATOES!

My faves with spinach is a sweeter/fresher red sauce, slabs o fresh mozz, loads of portabellas, then shredded cheese. Sometimes I'll add chicken, but usually not

I'm cooking dinner right now. Some pork chops seasoned with Old Bay, basil, paprika, and pan seared in Asian sesame ginger marinade. It's not a recipe, per se, just what I grabbed out of the spice cabinet that seemed interesting. I'll serve it over rice and peas. Simple, fast, and reasonably tasty for a Monday evening.

My pizza with spinach would be white pizza with an alfedro white sauce base, smoked chicken, sliced fennel, spinach and a cumbling of Swiss feta and rinsed, salted capers.

I was going to post this to my hunger thread, but tonight is sauteed pork with kale, Brussels sprouts, sundry other veggies, atop soy noodles (couldn't get konjac) in peanut sauce.
