prepstudinsc: Pasta Rustica

Cook 3/4 pound of any variety of twist pasta (gemelli) according to directions. In last 3 minutes of cooking, add 6 cups of small broccoli florets. In large skillet, cook 6 slices of bacon until crisp, drain on paper towels, crumble bacon. Discard bacon grease from skillet; add 1 pound plum tomatoes, seeded and diced, cook until softened, about 1 minute. Add 1 (6.5 oz) package garlic-herb cheese spread (Rondele'); cook over low heat about one minute, until melted. In large bowl, toss tomato-cheese mixture with pasta, bacon and broccoli. Garnish with freshly chopped basil.

da_blissmachine: Ener-G Egg Replacer: This is the one I use most often in baking; it's really only good for recipes that call for 1 or 2 eggs. You can find it at natural food stores. One whole egg = 1 tsp powder + 2 tbsp water. It's made from potato flour and other vegan leaveners.

Tofu: Tofu is great for egg substitutions in recipes that call for a lot of egg (like quiches). To substitute for only one egg in a recipe, whip 1/4 cup tofu and add to your cooking.

Stuff around your kitchen:
1 whole egg = 2 tbsp water + 1 tbsp oil + 2 tsp baking powder
1 egg = 1 tbsp ground flax seed simmered in 3 tbsp water
1 egg = 2 tbsp water + 2 tsp baking powder
egg white = dissolve 1 tbsp plain agar powder in 1 tbsp water. Whip, chill and whip again.

For use in sweet baking:
Try substituting 1 banana or 1/4 cup apple sauce for each egg called for in a sweet, baked recipe. These will flavour the recipe, however, so make sure banana or apple will taste good in it.

Dressing:
1 cup mayonnaise (if you're in the South, you've got to use Dukes Mayo)
1/4 cup sugar
2 tablespoons cider vinegar
mix together and refrigerate overnight

Toss with:
1 bunch broccoli flowerets
1/2 cup chopped Vidalia onion (or Maui Sweet onion)
1/3 cup raisins
1/3 cup real bacon bits
1/3 cup sunflower seeds
1/2 cup finely shredded cheddar cheese

1 large package frozen hashbrowns
1 can cream of chicken soup
1/2 cup finely chopped onion
1 cup sour cream
1/2 teaspon parsley chopped
1/2 cup milk
2 cups grated cheddar cheese
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup melted butter or margarine
2 cups crushed corn flakes

Combine all ingredients in a large bowl, except butter and cornflakes. Pour into buttered 9x13" Pyrex baking dish. Cover top of casserole with corn flakes, pour melted butter over top of corn flakes. Bake 45 minutes at 350 degrees.

well it's Fall, time for all the good pumpkiny sort of recipes....

3 1/2 cups flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon cinnamon
1 teaspoon nutmeg
2 cups canned pumpkin
3 cups sugar
1 cup oil
4 egs
2/3 cup water
1/2 chopped nuts (walnuts or pecans)

Sift dry ingredients in large bowl, mix well. Add remaining ingredients. Pour into loaf pans, bake at 350 for 1 hour, or until toothpick inserted comes out clean.

prepstudinsc: Lemon Supreme Cake

1 box lemon cake mix
1/2 cup sugar
4 eggs
1 cup apricot nectar
1/2 cup Crisco oil

Blend all ingredients in large bowl at medium speed for two minutes. Pour batter intow greased and floured 10 in. tube pan. Bake at 350 for 45-50 minutes or until center springs back when touched lightly. Cool right side up for 15 minutes, then remove from pan.

Glaze:
Blend 1 cup confectioner's cugar and 2 tablespoons lemon juice together, add a little milk, pour over warm cake.

2 lb. sliced carrots
Cook until just tender, drain and cool.

Mix together:
1 can tomato soup
1 chopped onion
1 chopped green bell pepper
1/2 cup olive oil (can use Canola or vegetable oil)
1/2 cup white vinegar (or cider vinegar)
1 cup sugar
dash of salt
1 Tablespoon Wocestershire sauce

Add carrots and marinate in refrigerator for at least 12 hours. Drain saus before serving.

prepstudinsc: Curry Chicken Casserole
1 package boneless, skinless chicken breasts
1 package frozen broccoli spears
1 package almond slivers
2 cans cream of chicken soup
1 cup mayonnaise
1 Tablespoon lemon juice
1/2 teaspoon curry powder (I use about 1 tsp.)
breadcrumbs

Slightly cook broccoli and arrange in casserole dish.
Sprinkle almonds over broccoli and place chicken breasts over this. Mix soup, mayo, curry and lemon juice together; spread over top of chicken, top with breadcrumbs. Bake uncovered @ 350 degrees for 45 minutes.

1 can (15 or 20 oz) chunk pineapple in its own juice
3 Tablespoons flour
1/2 cup sugar
1 cup grated cheddar cheese
1 1/2 cup crushed Ritz crackers
1 stick butter, melted

Place undrained pineapple in baking dish. Mix flour, sugar and cheese, place over pineapple. Top with cracker crumbs. Pour melted butter over crumbs. Bake at 350 dgrees for 30 minutes.

1 dozen eggs, hard boiled

1/2 cup frozen spinach, thawed and drained

1/4 cup mayonnaise

1/4 cup bacon, cooked and chopped

2 1/2 Tablespoons vinegar

1 Tablespoon sugar

2 teaspoons black pepper

1/4 teaspoon salt

Cut eggs in half, scoop out yolks and mash with fork. Mix all ingredients together with egg yolks and stuff back into eggs. Chill and serve on your grandmother's antique deviled egg dish with some pickles and olives. (for the quintessential Southern buffet plate)

ok, I know Oriental isn't the correct term, and I know Cole Slaw is a bastardization of the Dutch "kol slaa" or something like that, meaning cabbage salad.

Anyway....
1 package chicken flavor ramen noodles
1/2 cabbage finely shredded
4 green onions, chopped
1/2 cup toasted almond slivers
2 Tablespoons toasted sesame seeds


Dressing:
1/s cup oil
3 Tablespoons vinegar
2 Tablespoons sugar
1/2 teaspoon each salt and pepper
Ramen noodle seasoning pack
Mix dressing at least one hour ahead, if possible.

Mix vegetables together with dressing, at serving time, crumble ramen noodles on top of salad.

Serves 6.

Is it obvious that I'm Southern with all these casseroles?

6 chicken breasts
12 corn tortillas
1 can cream of mushroom soup
1 can cream of chicken soup
1 can chicken broth
5 green onions, chopped
1 can chopped mild green chiles

Mix soups, broth, onions and chiles together.
In a casserole dish, pour half of the sauce mixture, place tortillas over sauce, place chicken on tortillas, pour rest of sauce over chicken. Top with grated Monterrey Jack cheese. Bake at 350 degrees for 30 minutes.

prepstudinsc: Squash Casserole

2 1/2 lbs. yellow squash
4 Tablespoons butter
2 eggs, beaten
1/2 c. evaporated milk
1 cup grated cheddar cheese
1 cup crushed Ritz crackers
Salt and pepper to taste

Cook squash on medium heat in small amount of boiling salted wated. Drain. Mash into coarse pieces. Add beaten eggs, butter, milk, cheese and cracker crumbs.
Place in buttered casserole dish and top with additional cracker crumbs and grated cheddar cheese. Bake at 325 degrees for 30 minutes.

1 can Cherry pie filling
1 can (15 1/2 oz.) crushed pineapple
1 stick butter, softened
1 box yellow cake mix
1 cup chopped pecans

Mix together pie filing and pineapple. Pour into 9x13 glass baking dish. Mix together cake mix, butter and pecans, until crumbly. Spread mixture on top of cherry mixture and bake at 350 for 30 minutes or until golden brown.

1cup sugar
1 Tablespoon flour
1/3 cup melted butter
2 eggs, slightly beaten
3/4 cup milk
1 cup coconut
1 teaspoon vanilla

Mix in order given. Pour into unbaked pie shell and bake for 30 minutes at 350 degrees.
