awellhungboi: Okay, this is total bachelor food, so don't laugh at me, but I ate this a lot this summer. Nice break from the frozen rising crust pizzas and veggie burgers.
you can make your own Tzatziki sauce too--all you need is plain yogurt, fresh cucumbers, two tablespoons of vinegar (not balsamic), lots and lots of garlic, a squeeze of lemon, and a touch of mint. Drain yogurt in cheesecloth strainer. Chop cucumbers. Stir it all together. Chill (preferably overnight.)

I come from the 'intuitive' school of 'cooking'. I don't need no stinkin' measuring cup!
Greek Grilled Cheese
For the sandwich you'll need:
large pita or some other flat bread
fresh vegetables: (for instance)
tomatoes
cucumbers
green peppers
green leaf lettuce
red onion
mushrooms
calamata black olives (or you can use presliced--I won't tell)
meltable cheese:
mozzarella, for instance
or even (gasp) American
(I use mozzarella-flavored soy cheese for this part)
fresh feta cheese (this is absolutely essential!)
dressing:
Tzatziki sauce
--or--
red wine vinegar and olive oil are very nice
ranch would work well too
place pita on aluminum foil. layer two slices of meltable cheese. place under broiler until cheese is melted and pita is crisp
spread fresh chopped vegetables over cheese
sprinkle liberal amounts of feta over top
add dressing
wrap tightly
enjoy!
(Have lots of napkins! It's messy!)
