awellhungboi: Okay, this is total bachelor food, so don't laugh at me, but I ate this a lot this summer. Nice break from the frozen rising crust pizzas and veggie burgers.

Greek Grilled Cheese

For the sandwich you'll need:

large pita or some other flat bread

fresh vegetables: (for instance)

tomatoes
cucumbers
green peppers
green leaf lettuce
red onion
mushrooms

calamata black olives (or you can use presliced--I won't tell)

meltable cheese:
mozzarella, for instance
or even (gasp) American
(I use mozzarella-flavored soy cheese for this part)

fresh feta cheese (this is absolutely essential!)

dressing:
Tzatziki sauce
--or--
red wine vinegar and olive oil are very nice
ranch would work well too

place pita on aluminum foil. layer two slices of meltable cheese. place under broiler until cheese is melted and pita is crisp

spread fresh chopped vegetables over cheese
sprinkle liberal amounts of feta over top
add dressing
wrap tightly
enjoy!

(Have lots of napkins! It's messy!)

you can make your own Tzatziki sauce too--all you need is plain yogurt, fresh cucumbers, two tablespoons of vinegar (not balsamic), lots and lots of garlic, a squeeze of lemon, and a touch of mint. Drain yogurt in cheesecloth strainer. Chop cucumbers. Stir it all together. Chill (preferably overnight.)

Take a banana, some rum, some coffee-flavored liqueur, and some ice.... put it all in a blender, and it's heaven.

Well, Prep did say I was long overdue for an LPSG housewarming part. We can celebrate at my place. Sure, a one-bedroom might run a bit small what with all these huge cocks 'n such taking up space, but I think we're all a creative lot, eh? We'll work it out.

You can break the party up into several segements...you could do it by size (7-8.5", 8.5-10, 10.5-12, 12+) and assign each group a time, or it could be done by regions (Northeast, Mid-ATlantic, Southeast, Midwest, etc.), or even by alphabetical order. See, there are lots of possibilities, but I'm just waiting to try all the food that has been discussed.

prepstudinsc: We could have regional get togethers one year, national ones the following year, and an group wide international one the third year. Of course, anyone would be welcome to attend any of the get togethers, but I was just thinking in terms of travel convenience.

Montana Tendergroin

2 pounds bull testicles
1 cup flour
1/4 cup cornmeal
1 cup red wine
salt, pepper, garlic powder to taste
Louisiana Hot Sauce
hog lard (cooking oil can be substituted if you insist)

Split the tough skin-like muscle that surrounds each "oyster." (use a sharp knife) You can also remove the skin easily if the "oysters" are frozen and then peeled while thawing. Set into a pan with enough salt water to cover them for one hour to remove some of the blood and drain.

Transfer to large pot. Add enough water to float "oysters" and a generous tablespoon of vinegar. Parboil, drain and rinse. Let cool and slice each "oyster" into 1/4 inch thick ovals. Sprinkle salt and pepper on both sides of sliced "oyster" to taste.

Mix flour, cornmeal and some garlic powder to taste in a bowl. Roll each slice into this dry mixture. Dip into milk. Dip into dry mixture. Dip into wine quickly (repeat the procedure for a thicker crust).
Place into hot cooking oil.

Add Louisiana Hot Sauce to cooking oil (it'll sizzle some, so be careful!). Cook until golden brown or tender, and remove with a strainer (the longer they cook, the tougher they get).

Optional step: Throw away the testicles and drink the rest of the wine.

4 1/2 cups miniature marshmallows
1/2 cup peanut butter (I like crunchy, but smooth works, too)
1/4 cup butter
3 1/2 cups rice chex (or similar cereal)
3 1/2 cups corn chex (ditto)
1/2 cup M&M's
1. Grease a 13x9x2-inch baking pan, set aside.
2. In a large bowl, combine 4 cups of the marshmallows, peanut butter and butter.
3. Microwave on high for 2 minutes or until melted.
4. Stir until smooth.
5. Add the remaining marshmallows, Rice Chex, Corn Chexh and the M&M's.
6. To serve, pull apart and enjoy.
7. Refrigerate any leftovers (yeah, right) in an airtight container.

* DISCLAIMER: Don't forget to supervise young children while they are using the microwave.

Dilled Chicken

* 2 tablespoons butter
* 1 frying chicken, cut up (I usually use 4 chicken breasts and 6 legs)
* 1 (16 ounce) can chopped tomatoes
* 1 tablespoon snipped fresh dill
* 2 tablespoons lemon juice
* 1 teaspoon sugar
* 2 cloves garlic, crushed (or more)
* Salt and lemon pepper to taste

In a Dutch oven, melt the butter over medium heat.  Add the chicken and brown.  Stir in the tomatoes, dill, lemon juice, sugar, garlic, salt and lemon pepper.  Bring the mixture to a boil.  Reduce the heat to low and simmer, covered, for 35-40 minutes, or until the chicken is tender.  Serves 4.

Is your daily cup of Joe too bland?

I'm a fan of the instant stuff -- always have fun. Folgers makes a great variety of flavored instant coffees, and they taste fine on their own. For some added fun, I simply add a few scoops of a complementary ice cream to my mug (huge ones are perfect for this), add an extra tablespoon of mix, and then pour on the hot water. I added a few scoops of Edy's Double Fudge Brownie to my Mocha Fusion.

Substitute warm and/or boiling milk for a creamier drink.

Or, let the ice cream melt and add some ice cubes for an iced coffee drink.

This recipe will make your tongue slap your brain!

1 1/2 cups (3 sticks) butter
1 package (8 oz.) cream cheese (use the real stuff, not the light or fat free--you're using butter anyway, so go all out, and don't worry about the fat grams!)
3 cups sugar
6 eggs
1 Tablespoon vanilla (it's got to be real vanilla extract)
3 cups sifted All-purpose flour
1/4 teaspoon salt

Preheat oven to 325 degrees. Grease and flour a 12 cup Bundt pan (you can also use a 10 in. tube pan).
Beat butter and cream cheese until light and fluffy--almost the consistancy of a heavy whipped cream.
Slowly add sugar to the mixture and whip until very light and fluffy. Add eggs one at a time, beating well after each addition. Blend in vanilla. Sift flour twice, adding the salt on the second sifting; blend into creamed mixture. Spoon batter into prepared pan. Back for 1 hour and 15 mins. or until cake tester inserted one inch from edge of pan comes out clean. Cool in pan for 5 minutes, turn out onto wire rack and cool completely.
Dust with confectioner's sugar if desired. 12-15 servings.

prepstudinsc: Prepstud's Famous Key Lime Pie

2 cans (14. oz.) sweetened condensed milk
6 egg yolks
1 cup Key Lime juice (has to be Key Lime juice, not regular lime juice)
Combine milk, egg yolks and juice; blend until smooth.
(I blend it with a Krups immersion blender--makes it very nice and smooth)

Pour filling into homemade deepdish graham cracker pie crust and bake at 350 degrees for 15 minutes. Refrigerate for at least 6-8 hours.

Top with homemade whipped cream and a sprig of mint or some lime zest.

If you use a regular pie plate or a store bought gram cracker crust (you know your grandmother wouldn't approve!) halve the recipe or else you'll have to make two pies.
